Gluten Free Rice Cereal Treats


Ingredients:
5 cups of Marshmallows (any brand will do)
6 cups of gluten free rice cereal
1/4 cup butter (or butter substitute for dairy free)



I decided to make these rice cereal treats dairy free so I used Earth Balance butter substitute instead of butter. 



You can use any brand of gluten free rice cereal but I used Barbara's brand of Brown Rice Crisps.  They worked perfectly in this recipe!


Directions:
In a large pot, combine marshmallows and butter (or butter substitute).  Cook on low heat while constantly stirring the marshmallows and butter as they melt.  As soon as the marshmallows and butter are melted, quickly add the 6 cups of rice cereal.  Stir vigorously.  Then, pour the marshmallow/cereal mixture into a 9x13" pan and allow to cool.  Cut into small squares and serve!
